Olazzo's Chicken Cardinale
I'm not saying this is Olazzo's recipe. But after begging the owner for the recipe and failing miserably, this is my version and it's as close as I can get to the real deal. Only a few ingredients, super easy, and may even be a tad better than the original!
Ingredients:
2 skinless boneless chicken breasts **
One 1-pound box of penne (or pasta of choice)
Jar of Rao's Marinara - 24 oz
4 tbsp butter
Ingredients:

One 1-pound box of penne (or pasta of choice)
Jar of Rao's Marinara - 24 oz
4 tbsp butter
Heaping tablespoon of sugar
1 cup heavy cream
Fresh ball of mozzarella - cut into small bite size chunks
Jar of sun dried tomatoes in olive oil, drained and chopped
shredded parm - to taste
fresh basil - chopped
Directions:
1. Cook the pasta according to directions on box, drain, and set aside
2. Season chicken with Italian seasoning and saute in olive oil over medium/medium high heat until cooked through. Cut into bite size pieces. set aside
3. Combine the marinara, butter, sugar. & heavy cream, in large enough pan to hold the pasta. Combine over medium heat until warmed through.
4. Add the cooked chicken to the sauce
5. Add the sun dried tomatoes, or serve on side if you have picky eaters that don't like them.
6. You can add the fresh mozzarella to the sauce at this point if you like it to get melty/gooey or serve it on the side and add to each individual bowl.
7. Top each bowl of pasta with sauce, fresh basil and sprinkle of shredded parmesan

**You could also use shrimp or sausage instead of the chicken or go vegetarian and leave it out altogether...
