BLT Pasta Salad
Perfect as a side for dinner and then lunch the next day. Always a crowd pleaser!
Ingredients
Box of gemelli or cavatappi pasta
2 small ears fresh corn (or use frozen)
2 scallions, minced
8 ounces grape tomatoes, preferably mixed heirloom, halved
3 cups baby arugula (or to taste)
4 slices bacon, cooked until crisp, and crumbled
Shredded mozzarella to taste
Jar of favorite ranch dressing (I like Marie’s in refrigerated section)
Directions
- Cook the pasta in boiling salted water according to package directions; drain and run under cold water to cool.
- Meanwhile, drizzle olive oil in pan and sauté corn over medium heat until just starting to brown.
- In large bowl, combine the cooked pasta, corn, scallions, tomatoes, arugula, bacon and mozzarella. Add enough dressing to coat. Season with salt and pepper.
