BLT Pasta Salad

Perfect as a side for dinner and then lunch the next day. Always a crowd pleaser!

Ingredients
Box of gemelli or cavatappi pasta
2 small ears fresh corn (or use frozen)
2 scallions, minced
8 ounces grape tomatoes, preferably mixed heirloom, halved
3 cups baby arugula (or to taste)
4 slices bacon, cooked until crisp, and crumbled
Shredded mozzarella to taste
Jar of favorite ranch dressing (I like Marie’s in refrigerated section)

Directions
  1. Cook the pasta in boiling salted water according to package directions; drain and run under cold water to cool.
  2. Meanwhile, drizzle olive oil in pan and sauté corn over medium heat until just starting to brown.
  3. In large bowl, combine the cooked pasta, corn, scallions, tomatoes, arugula, bacon and mozzarella. Add enough dressing to coat.  Season with salt and pepper.
