Banana Bread with chocolate chips

Am I the only one who has a ton of bananas going bad at all times? If you're in the same boat, this is the recipe for you! So easy, your kids can make it. Sour cream is the magic ingredient. If it's not gobbled up in the first few days for breakfast, see below for how to turn it into a fantastic dessert: banana bread sundaes!

Ingredients:

  • 1/2 cup (1 stick) butter, room temperature 
  • 1 cup sugar 
  • 2 large eggs 
  • 1 1/2 cups unbleached all-purpose flour 
  • 1 teaspoon baking soda 
  • 1 teaspoon kosher salt 
  • 1 cup mashed very ripe bananas 
  • 1/2 cup sour cream 
  • 1 teaspoon pure vanilla extract 
  • 1/2-1 cup chocolate chips
  • DIRECTIONS
1. Preheat oven to 350 degrees & spray a 9-by-5-by-3-inch loaf pan with baking spray; set aside.
2. In an electric mixer fitted with the paddle attachment, cream butter and sugar until light and fluffy
3. Add eggs and beat to incorporate
4. In a medium bowl, whisk together flour, baking soda, and salt. Add to the butter mixture and mix until just combined. 
5. Add bananas, sour cream, and vanilla; mix to combine 
6. Stir in chocolate chips and pour into prepared pan.
 
7. Bake until a cake tester inserted into the center of the cake comes out clean, about 1 hour 
8. Let rest in pan for 5-10 minutes, then turn out onto a rack to cool.

For Dessert:

For each sundae: warm a slice of banana bread for about 15 seconds in microwave. Top with scoop of ice cream, (I like caramel, chocolate chip, or chocolate) top with whipped cream, and drizzle with chocolate syrup and/or caramel sauce.
