Radish Crostini with Boursin
This is one of my all time favorite appetizers. Beautiful at Christmas time with the red radishes and green chives...
Ingredients:
For the crostini:
Baguette - sliced diagonally - about 1/4 inch thick
olive oil
S & P
For the toppings:
Boursin cheese
radishes - sliced thin
chives - chopped (green onions will work if that's all you have)
flaky sea salt (I use the brand Maldon. If you can't find it, use kosher salt)
Directions:
1. Pre-heat oven to 350 degrees
2. Line a baking sheet with foil
3. Place baguette slices on baking sheet and brush tops with olive oil
4. Season with salt and pepper and bake for 10 minutes
5. Transfer to cooling rack and allow to cool
6. When crostini is cool, spread on the Boursin, layer with enough radishes to cover cheese (usually around 2-3 per crostini), top with chives, and a sprinkle of flaky sea salt
