Chicken and/or Beef Fajitas
I make this recipe all the time. Marinate in the morning, ready to go at dinner. Serve with chips & salsa, yellow rice, simple green salad, and/or Mexican Street Corn (see post for recipe)

Notes:
Use chicken or beef or both. I cut her marinade recipe in half as I don't cook 6 pounds of meat at a time. I don't bother making her pico de Gallo. It's good, but too much work. I serve with store bought fresh salsa instead.
For toppings: cheese of choice, sour cream, guacamole, diced avocado, salsa (fresh and/or jarred), cilantro, lime wedges, & hot sauce.
Modifications:
Low Carb: skip the tortillas and use lettuce for wraps
GF: use soft GF corn tortillas
Vegan: skip the meat, add beans and load up on extra veggies.
Pescatarian: skip the meat, add beans and load up on extra veggies. Or you could also throw some shrimp on the grill.
Picky Kids: You could cut back on the red pepper/worcestshire/Chili flakes in marinade. Also, let them build their fajitas how they like them.
