Chicken Souvlaki


If you love Greek food, this will hit the spot!

Notes:
I mainly use chicken for souvlaki, but pork or lamb work great too. You can serve it as is, but if I am being really nice, I will make homemade Greek fries to serve on the side. Once the potatoes are cooked, sprinkle with oregano and feta. If you don't want to fry, you could make roasted potatoes and serve them the same way with oregano and feta. I've even done Greek style tater tots. Yum! And I buy the tzatziki sauce to make life easier. Cava's is the best and they sell it at Whole Foods. If you're going there, or ordering from there, get Cava’s crazy feta too. It's spicy and so good. But if you want to make the tzatziki, Ina has a good recipe:

Chicken Souvlaki Recipe:
1 package chicken breasts (2-3) cut into Cubes

Marinade:
Zest and juice of 2 lemons
2 tbsp red wine vinegar
1 tsp dried oregano
1 tsp dry thyme
5 large cloves of garlic - crushed
3 tbsp olive oil
salt & pepper

Ingredients/toppings for serving:
pita bread, feta, tzatziki sauce, shredded lettuce, chopped tomatoes, sliced red onion
Optional: pepperoncini, olives

Directions:
First thing in the morning, whisk together all ingredients for marinade. Cut the chicken into roughly
1 1/2 inch cubes. Marinate in ziploc bag in fridge until ready to cook. It's best grilled, but you can also cook them in grill pan or roast them in oven. For broiling method, line a baking sheet with foil. place a cooling rack on top of foil. Spray the rack with baking spray to avoid sticking. Lay out the chunks of chicken and broil for about 7-8 minutes.

To serve:
Warm pita in toaster or oven. Top with chicken and whatever toppings you like.

Modifications:
Low carb: Skip the pita and serve over lettuce greens with balsamic or Greek vinaigrette.
GF - GF Pita, or skip the pita altogether and serve over salad greens with vinaigrette
Vegan - Leave out the chicken and eat salad with pita bread.
Pescatarian: Leave out the chicken. You could also set aside some of the marinade and throw in some shrimp about an hour before cooking.
Picky Kids: Cook some of the chicken plain (olive oil/salt & pepper) and lay out all the toppings on the table. Have them build their own sandwiches with whatever toppings they like. Adin uses ketchup (gross) but that way, he eats it!
