Cobb Salad with Homemade Blue Cheese Dressing
A classic salad for a reason. Delicious and hearty enough for a satisfying dinner.
Ingredients:
lettuce greens of choice (I like bib and/or romaine)
pint of grape tomatoes- sliced in half
1-2 containers blue cheese crumbles (or other preferred shredded cheese)
2 avocadoes - chopped
4-6 slices bacon - cooked and crumbled3 green onions - chopped
1-2 cups corn- from frozen- cooked in pan over medium heat until almost roasted
2-3 green onions - chopped
2-3 chicken breasts - cooked in grill pan and sliced
4-5 eggs - hard boiled and sliced into quarters or chopped
Blue cheese dressing (recipe to follow)
To assemble: (see picture below)
For each salad: Layer each plate with lettuce. Then, starting at left, make a pile of tomatoes, then next to it a pile of blue cheese crumbles, next to that a pile of avocados, and so on all the way though the hard boiled eggs. Drizzle with blue cheese dressing and serve.
For Dressing:
1/2 cup mayonnaise
1/4 whole milk
1/4 cup sour cream
dash Worcestershire sauce
1/3 cup blue cheese crumbles
salt & pepper
Directions:
Whisk together mayo, milk, sour cream and Worcestershire. Stir in blue cheese crumbles and add salt and pepper to taste.
Notes:
You can add or delete ingredients depending on what your family likes. If you don't feel like making the blue cheese dressing, use a store bought jar. Marie's in the refrigerated section is the best. You can make the salads and assemble them earlier in the day and drizzle with dressing right before serving. Serve with warm baguette for those who might need a little more carbs in their life.
