Ina's Easy Creamy Tomato Soup


This is my tried and true tomato soup recipe. It is quick and easy and most importantly, delicious. Serve it with a big green salad or warm gooey grilled cheese sandwiches. Always a family favorite!

Notes:
I do not bother making her grilled cheese croutons. I just make grilled cheese sandwiches on the side. No worries if you don’t have saffron; just leave it out.  Also, I skip the orzo and cook any small pasta I have for my pasta lovers. I like ditalini or farfalle. If you leave the pasta out of the soup and serve it in individual bowls, you can easily freeze any leftover soup. Speaking of, double the recipe if you want leftovers for lunch or extra to freeze. Top with shredded parm and chopped fresh basil if you have it. YUM!

Modifications
Low Carb:Skip the grilled cheese sandwiches and serve soup with salad instead
GF: Use GF bread for grilled cheese sandwiches & GF pasta for soup
Vegan:Make two separate batches of soup and use vegetable stock, leave out heavy cream (or use vegan sub) and use vegan cheese/butter for grilled cheese sandwich
Pescatarian: This recipe uses chicken stock so you could try vegetable stock instead
Picky Kids: I think they'll love this one. If not, serve them some of that quarantine can soup you have to start getting rid of!
