Gooey Grilled Cheese Sandwiches

My grilled cheese sandwich growing up was melted velveeta on white bread. These are far from that! 

I use sourdough bread and a combination of three cheeses. Always American and cheddar. For the third cheese, I use whatever white creamy cheese I have on hand. Havarti, Muenster or Provolone all work well.

Butter both sides of the bread. If you're making them for several kids/family members at a time, bust out your pancake griddle. Cook them low and slow so the cheese melts without burning the bread. And don't skimp on the butter.  More is better!
