Grilled Shrimp Skewers with Tomato, Garlic and Herbs


With an easy marinade that uses mainly pantry staples and only takes 30 minutes to an hour to marinate, this recipe is a weeknight staple in our house. Delicious!

Notes:
The recipe calls for grilling the shrimp, but you can use a grill pan if you don't feel like bothering with the grill. I serve the shrimp with a side of rice and a crisp green salad. It's also good with naan bread (what isn't?!) I buy it when I see it and freeze it. Freezes great! Then we use it for Chicken Tikka Masala or another favorite, naan pizzas...

Modifications:
Non-shrimp households: Try it with chicken
Low Carb: Skip the rice and/or naan
Gluten Free: Skip the naan
Vegan: Just eat the salad and naan
Pescatarian: You're good!
Picky kids: You could save a couple of shrimp to serve plain. Or skip the shrimp and serve them rice, salad and bread
