Summer Corn Soup with Fresh Herbs


Unlike most corn chowders that are loaded with potatoes and heavy cream, this recipe is sweet and delicious without being heavy. Tastes like summer! Serve with gooey grilled cheese sandwiches or a side salad and enjoy a meat free meal.

Notes:
This recipe is perfect for late in the summer when you can get super fresh local corn. Use yellow corn if possible. It will taste just as good with white, but it will look kind of gray. If you have a high power blender (like a Vitamix) use that instead of hand immersion blender before straining. It is much quicker and easier. And in addition to the fresh herbs, I always top it with a pile of crunchy bacon.

Modifications:
Low Carb: Corn is starchy but otherwise you're good
Gluten Free: Naturally GF
Vegan: use vegan butter substitute and vegetable broth
Pescatarian: use vegetable broth
Picky Kids: Skip the basil and/or thyme if that's not their thing and at least have them try it
