Blackened Fish Sandwiches
Blackened Fish Sandwiches:
This is a go-to dinner for us. It does have a kick though, so if you don’t like it quite as spicy, sprinkle the filets VERY LIGHTLY not generously. I like serving it with a simple pasta salad or summer corn salad.
6 Mahi Mahi filets (Or Your Favorite Fish)
2 tbsp butter
1 tbsp olive oil
1 Teaspoon Smoked Paprika
1 Teaspoon Onion Powder
1 Teaspoon Garlic Powder
1 Teaspoon Cayenne Pepper
1 Teaspoon Thyme
1 Teaspoon Oregano
1 Teaspoon Black Pepper
1 tbsp kosher Salt
Brioche rolls (or kaiser)
Tartar sauce
about 1/4 Cup Mayonnaise
Juice of about 1/2 Lemon (or to taste)
1 tsp relish
sprinkle of tarragon
dash of hot sauce
Directions:
- In a small bowl, mix all the dried herbs and spices
- Season the mahi mahi filets generously on all sides with seasoning mix.
- combine ingredients for tartar sauce and set aside.
- preheat a large skillet over medium high heat, and add butter and oil. Once the butter has foamed and subsided, add the mahi mahi filets and cook until nearly opaque all the way though. Flip and cook another minute, then transfer to a platter and set aside.
- Meanwhile preheat griddle or skillet over medium-high heat. Add a tablespoon of butter to the pan. halve the sandwich buns. add them to pan with melted butter and toast until golden brown.
- Remove the toasted buns and slather with tartar sauce. top with fish filets. top the fish with shredded lettuce and a few dashes of hot sauce.
