California Pizza Kitchen Arugula Salad

 


 

This is my version of a salad they have at California Pizza Kitchen. It has a lot of ingredients, but they all come together for a satisfying weeknight dinner.

 

Ingredients:

 

Arugula

 

Quinoa (cook according to directions on box. However, I always use chicken broth instead of water for quinoa to give it a little extra flavor.)

 

Roasted asparagus, chopped into bit size pieces

 

Sun dried tomatoes - drained and chopped

 

Red onion - sliced. If you like them a little less strong, let the slices soak in a bowl of water for about 5-10 minutes and then drain and dry. 

 

Pine nuts (toast them in a pan for a little extra flavor.)

 

Chopped feta

 

Sliced chicken breast (I use rotisserie to make it easier)

 

Girard's Champagne dressing

 

Directions:

Combine all ingredients in large bowl. Add the dressing to taste. Toss and serve!
