Chicken Piccata

 The crunchy chicken with the lemon sauce topped with arugula  is fantastic. Serve with a side of spaghetti aglio olio for a meal you won’t forget!


Notes:
I use plain panko not seasoned regular bread crumbs for the chicken.  I use a little less lemon and a little more butter. I skip the parsley and mix some arugula with olive oil and S&P. I place a couple slices of prosciutto on the chicken and then top that with the arugula mixture. Really good that way! If you end up with too much chicken, par freeze what is left. 

Modifications:
Low carb: skip pasta
GF: use GF flour & GF bread crumbs (my favorite is Kikkoman GF panko if you can find them) and use GF spaghetti for pasta.
Vegan:eat the arugula salad with pasta and skip the parm (or use vegan parm)
Pescatarian: skip the chicken, and eat arugula salad & pasta
Picky kids: serve the lemon sauce on side and don't top the chicken with arugula unless they happen to like arugula. Most kids don't. I have also poured a little raos marinara on top of the chicken & sprinkled some mozzarella or provolone or whatever you have and broiled it to turn it into chicken parm for them.
