Kristy’s Creamy Corn Salad

My sister-in-law Kristy brought this to a family dinner one night and I immediately asked for the recipe. Addictive! 

 

3 ears corn- husked**

¼ cup red onion, diced

1 jalapeno – seeds and ribs removed and minced (or to taste)

¼ cup mayo

2 tbsp fresh lime juice

¾ cup crumbled feta (or cotija)

S&P

 

Directions:

1.     Grill corn until charred**

2.     Cut off kernels and add to bowl

3.     Add remaining ingredients, stir and serve warm

**Skip the fresh corn and the grill and use Trader Joe's frozen roasted corn. A great shortcut!

**To turn into pasta salad – Add cooked bowtie pasta, extra lime juice, and a little extra chopped jalapeno to taste
