Make ahead mashed potatoes
I don't eat mashed potatoes, but my family loves these. According to them- super creamy and you really can make them ahead (even the night before) without them getting gummy when warmed up. I make them every year this way for Thanksgiving. No need to worry about using unsalted butter - salted works fine.
