Shrimp, Corn, & Zucchini Stir Fry
Feels healthy and tastes like summer!
Notes:
I serve it over angel hair pasta. I usually don't do the full two pounds of shrimp. Probably closer to 1- 1 1/2 pounds. Use as much shrimp as you think your family will eat. I also use less zucchini. Maybe 1/2-1 tops. But the recipe calls for two- so use as much as you like.
Modifications:
Low carb: leave out pasta completely or serve over zoodles.
GF: use GF pasta or zoodles
Vegan: omit parm and shrimp and replace 1 tbsp butter with 1 tbsp olive oil.
Picky kids: just make them try a little of the stir fry over pasta and they can essentially just eat the pasta.
