Spanish Style Cod in Chorizo-Tomato Broth
I made this a few weeks ago and Matt is already requesting it again. The ground chorizo and tomato broth make the dish!

Notes:
The recipe calls for cod, but use whatever fish you like. There is a lot of rockfish where we are so that's what I use. Mahi mahi or swordfish would probably work well too. I love the ground chorizo, but if you can't find it, use diced pancetta. I made a quick batch of my crostini (see my radish crostini post for recipe) and served it that way instead of cooking the baguette in the pan juices. I’ve also served it over Ina’s cheesy cheddar grits if you’re up for a little extra cooking.
Modifications:
Low Carb: skip the baguette/crostini
Gluten Free: skip the baguette or use GF baguette to make the crostini
Vegan: ??
Pescatarian: Use vegetable broth and leave the chorizo out of your broth
Picky Kids: At least make them try it...
