Fish in Crazy "Water"
To be honest, I don't know why I ever looked at this recipe because the name of the dish sounds pretty gross. But with a few tweaks it is absolutely delicious. I use wine instead of water and add onions to the tomatoes. The recipe calls for red snapper, but it is delicious with halibut or rockfish as well.
Ingredients:
1/4 cup olive oil
1/2 small onion - chopped
1/8 tsp fresh red Chile - finely minced
3 large garlic cloves - separated
3 tomatoes on the vine - chopped, juices reserved
2 tablespoons parsley plus extra for serving
1 cup white wine
2-6 ounce skinless fillets of choice (red snapper, halibut or rockfish)
2 thick slices of sourdough
Directions:
Thinly slice 2 of the garlic cloves
In a deep skillet, add the olive oil and cook the onion, chile and thinly sliced garlic over medium/medium low heat until softened.
Add tomatoes and juices along with parsley, salt and pepper and cook on medium for about 10 minutes
Add wine and cook for about 10 minutes more.
Meanwhile - season the fish with salt and pepper and pan sear in olive oil in a separate pan until cooked through.
Toast the sourdough
Cut the third garlic clove in 1/2 and rub the toasted bread with the cut side of the garlic
Place the sourdough slices in shallow bowls, top with fish, and spoon the tomato, onion mixture over the fish
Top with extra parsley and serve
