Baked Halibut with roasted cherry tomatoes
Courtney Cox posted this easy recipe on instagram and I weirdly decided to give it a shot. I highly recommend you do too! Easy, healthy, delicious weeknight meal
Ingredients:
Large container cherry tomatoes
2-3 cloves garlic, minced**
1 tbsp red wine vinegar
1 tsp honey
2 tbsps olive oil
1 tsp kosher salt
1/2 tsp black pepper
1 large shallot, sliced
3 skinless halibut fillets ***
Chopped basil and zest of 1 lemon for garnish
Directions:
pre-heat oven to 400 degrees
Half the cherry tomatoes and place them in a baking pan.
Add the garlic, red wine vinegar, honey, olive oil, salt, pepper and shallot. mix thoroughly
bake for 15 minutes at 400 degrees
While tomatoes are cooking, drizzle halibut with olive oil, S&P
When the tomatoes have cooked 15 minutes, take the tomatoes out of the oven, put the halibut in the pan and use a spoon to top the halibut fillets with the tomato mixture.
cook 10-12 minutes more
Once fish is cooked through, garnish with handful of chopped basil and lemon zest.
Serve with aioli (optional)
Aioli:
3/4 cup mayo
1 cove garlic, crushed to a paste**
juice and zest of 1 lemon
salt (pink if possible) and pepper
pinch of cayenne
Directions-
Combine all ingredients in a medium bowl.
**I like using the frozen garlic cubes from Trader Joe's. They defrost quickly and save you from peeling and mincing fresh garlic.
***You can use any white fish you like
