Fried Chicken Cobb salad with homemade buttermilk dressing

 I made this salad the other night and it was a huge hit. If you don't feel like making homemade fried chicken tenders, head to Popeyes like I did and buy their mild chicken tenders. You could also buy frozen chicken tenders. As for the dressing- you could always use store bought ranch, but this homemade version is really yummy.


Ingredients:

mixed lettuce

fried chicken tenders, warmed and sliced into bite size chunks 

bacon, cooked and chopped 

chopped avocado

chopped green onions

chopped grape tomatoes

corn (I use trader joes frozen sweet corn and saute in a pan with some olive oil)

drizzle of honey mustard


Buttermilk Ranch dressing:

1/2 cup sour cream

1/2 cup buttermilk

1/4 cup mayo

1-2 garlic cloves, minced**

1/2 tsp salt

1/4 tsp pepper

1 1/2 tsps dried dill

1/4 cup finely chopped fresh chives 

2 tsps fresh lemon juice

few dashes tabasco sauce (optional)


Directions:

Combine ingredients in a medium bowl and whisk well. Chill until ready to serve. 

**Dressing will keep 3-4 days in refrigerator. The garlic gets stronger the longer it sits, so you might want to use less if you're not serving it right away.
