Linguine with Nduja and Clams
I absolutely love linguine and clams so why not try it with Nduja! Nduja is a spicy sausage and adds a ton of flavor to this classic dish.
Ingredients:
1/2 pound fresh linguine - pasta water reserved. (dried is fine too)
2 tbsps Olive oil
4 garlic cloves, minced
Tube of Nduja (5 oz)
Fresh clams (we usually do around 18 for 2 servings )
1/2 cup white wine
Can of chopped clams, drained and liquid reserved
2 tbsps Butter
Fresh flat parsley- chopped
Directions:
Cook the linguine according to package directions. set aside
In a large skillet, heat olive oil over medium high heat. Add garlic and saute 1 minute
Add the tube of Nduja and cook 2 minutes
Add fresh clams, wine, canned clams, and 1/8 cup of reserved clam juice
cover and cook about 5 minutes or until clams open
Off the heat, swirl in butter and add pasta to the pan. If the sauce looks like it needs a bit more liquid, add a tad of the reserved pasta water.
Top with parsley and serve with a crusty baguette.
