Magliano's House salad
Anyone who's been to Maggiano's has had their house salad. Simple ingredients and absolutely delicious for a main or side. Make the dressing ahead of time and it comes together quickly and easily on a weeknight.
Ingredients:
Dressing-
1/3 cup Red wine vinegar
1 tbsp dijon mustard
1 tbsp white sugar
1/2 cup water
2 tsps minced garlic
2 1/2 tsps kosher salt
pepper to taste
1 cup olive oil or oil of choice
1 generous pinch dried oregano
For the salad:
5 cups chopped romaine
5 cups chopped iceberg
3 ounces gorgonzola/bue cheese crumbes
4 ounces thinly sliced prosciutto **
1 small red onion, thinly sliced **
oil to cook the prosciutto
Instructions:
To prepare the dressing combine all the ingredients EXCEPT the oil and oregano in the jar of a blender. Blend until smooth. Then with blender running, add the oil in a steady stream. Turn off blender and add oregano. Pulse 2-3 times or until combined. Set aside
Heat a drizzle of oil in a large skillet over medium high heat. Add prosciutto and cook until crispy. Watch carefully because it can burn quickly. Remove and drain on paper towel. Set aside.
In a large bowl, toss the lettuce, cheese, onion and prosciutto. Lightly drizzle some of the dressing on the salad and toss until combined. Serve immediately with additional dressing on side.
**Cooked and chopped pancetta or bacon works just as well as prosciutto
**I use a little less onion and like to soak red onions for about 5-10 minutes in a bowl of water to soften them/make them less strong. Drain and dry before using
