Roasted Brussels sprouts with balsamic glaze, bacon, gorgonzola, lemon & honey
I get it if you don't like Brussel sprouts. I didn't either for a very long time. But I promise you, try these and you will change your mind.
Ingredients
Bag of Brussels sprouts, trimmed and cut in half through the core or cut into thirds if big
3-4 slices bacon, chopped (or diced pancetta)
good olive oil
Kosher salt and freshly ground black pepper
Drizzle of Balsamic glaze
Drizzle of honey
lemon zest to taste
gorgonzola/blue cheese crumbles to taste
Directions:
1. Preheat the oven to 400 degrees.
2. Place the Brussels sprouts on a sheet pan, including some of the loose leaves, which get crispy when they're roasted. Drizzle with olive oil and season with salt and pepper.
3. Add the raw bacon (or pancetta) toss with your hands, and spread out in a single layer.
4. Roast the Brussels sprouts for 20 to 30 minutes, until they're tender and nicely browned and the bacon is cooked. Toss once during roasting.
5. Remove from the oven, drizzle immediately with the balsamic glaze & honey and toss again.
6. Zest the lemon right over the pan.
7. Add Gorgonzola and toss again.
8. Taste for seasonings, and serve hot
