Kale salad with parmesan, pomegranates and toasted pecans

I had this at a girls weekend years ago and immediately asked for the recipe. So good!


 Ingredients:


For the salad:

Kale (massaged)

pomegranate seeds

shaved parmesan

toasted pecans or pistachios


For the dressing:

1/4 cup olive oi

1/4 cup pomegranate vinegar (or apple cider vinegar if you can't find pomegranate)

2 tbsp pomegranate juice

1/2 shallot - finely minced

1 tsp dijon mustard

salt and pepper
